In a production space in Birmingham, Alabama’s Lakeview District that has housed local breweries for the past 15 years, Daysol Coffee is now open for business.
Trading hops and barley for the tropical seeds of the coffee fruit, Daysol Coffee is putting production literally on display, with a Diedrich IR-12 roaster elevated on a platform. Guests can enjoy the show while sipping on classic espresso drinks, specialty lattes and cold brews served on tap.
“I told my wife probably a million times since I started down this coffee road, ‘I want a coffee roastery and shop that looks and feels like a brewery,'” Daysol Coffee Co-Founder Bert Davis told Daily Coffee News. “Well, it’s here and it is awesome.”
Syrups with flavors like honey cinnamon, rosemary lavender, salted caramel and more are made fresh in an on-site kitchen within the 8,000-square-foot facility. Kombucha, matcha and a selection of fresh pastries round out the menu, a significant evolution from the spartan program at Daysol’s original roastery cafe in Helena, which focused primarily on drip coffees served black.
In 2023, the company introduced its first espresso program, hired its first employees and relocated its retail bar to a higher-traffic location in Bluff Park. Now retail and roasting are reunited at the new location, where Americana vibes run strong with timeworn wood floors and fixtures and plenty of space for events and live music.
“The brewery’s history is evident in the feel of the space,” Davis said. “I wanted to keep it that way.”
Breakfast tacos made by Ladybird Taco satisfy early cravings alongside pastries from Bandit Patisserie. A gallery space will soon feature rotating works by local artists, and as spring returns to Birmingham, an outdoor stage awaits for additional live performances.
“We’ll be doing plenty of live events at the space,” said Davis. “The demand from folks wanting to rent the space for office events, catered dinners, graduation parties, etc. has already been crazy.”
As the new day dawns for Daysol, Davis said he’s relishing the moment, which follows nearly a decade of incremental growth as a small business owner.
“I have purposefully grown this company slowly, methodically and persistently,” said Davis. “I started this dive into coffee really just wanting to create something good, first with the coffee itself, then to create a brand that represents that quality. And now the final piece of the puzzle: a space that is 100% Daysol.”
