The goal for the spaces and for the brand is the same: Make everything as simple as possible for the guest, and as honest as possible in how it feels.&#8221;<\/p>\n<p>Among the shop&#8217;s interior details are vertical strips of Ukrainian folk patterns painted in white on light gray walls, surrounding a cloud-shaped, backlit, borderless mirror. While Simpl\u2019s owners embrace their roots, the connection comes through execution more than ornament.<\/p>\n<p>&#8220;I\u2019m not sure how to quantify &#8216;Ukrainian style&#8217; in design, but I can definitely describe our mentality,&#8221; Chernyshov said. &#8220;Where we come from, nothing is guaranteed. So if you decide to do something \u2013 a coffee shop, a sandwich, a guest interaction \u2013 you do it as well as you possibly can, or you don\u2019t do it at all. It\u2019s about stability,&#8221; Chernyshov said. &#8220;We don\u2019t just need great shots today \u2014 we need great shots every day, for years. The Midtown East shop, open since October 2025, keeps the same tight focus while offering a little more room to linger.<\/p>\n<p>&#8220;We like smaller, very intentional footprints where every square foot has a job,&#8221; Chernyshov said.<\/p>\n<p>Before coming to the U.S., Chernyshov built his career in Ukraine as CEO of Aroma Kava, scaling from one location to more than 350 while also launching a wholesale bakery. Co-founder Oleksandr Voievodin said he previously founded My Coffee in Ukraine, growing it from one location into a franchised business with more than 150 shops.<\/p>\n<div id=\"attachment_194543\" class=\"wp-caption alignnone\" ><a href=\"https:\/\/dailycoffeenews.com\/2026\/02\/12\/with-deep-experience-simpl-coffee-makes-it-look-easy-in-manhattan\/simpl-coffee-new-york-fidi\/\" rel=\"attachment wp-att-194543\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-194543\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/02\/Simpl-Coffee-New-York-FiDi.jpeg\" alt=\"Simpl Coffee New York FiDi\" width=\"960\" height=\"1280\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/02\/Simpl-Coffee-New-York-FiDi.jpeg 960w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/02\/Simpl-Coffee-New-York-FiDi-225x300.jpeg 225w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/02\/Simpl-Coffee-New-York-FiDi-465x620.jpeg 465w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/02\/Simpl-Coffee-New-York-FiDi-113x150.jpeg 113w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/02\/Simpl-Coffee-New-York-FiDi-768x1024.jpeg 768w\" sizes=\"auto, (max-width: 960px) 100vw, 960px\" \/><\/a><p class=\"wp-caption-text\">Simpl Coffee in the Financial District.<\/p><\/div>\n<p>Both founders sold their stakes and moved to the U.S. in 2022 after Russia\u2019s invasion of Ukraine.<\/p>\n<p>&#8220;When the full-scale war started in Ukraine, safety became the first priority for our families, our team, our lives,&#8221; said Chernyshov. &#8220;For us, the U.S. is the most attractive market in the world for many industries, and for coffee shops it\u2019s almost a dream stage: strong coffee culture, high standards, demanding guests and room for new brands with a very high bar for service and consistency.&#8221;<\/p>\n<p>Simpl\u2019s custom blends and single-origin coffees for both locations are roasted by a third-party partner in Brooklyn, while a small daily pastry lineup is delivered from <a href=\"https:\/\/balthazarny.com\/bakery\/\">Balthazar<\/a>.<\/p>\n<p>With the first two shops serving as a stress test for systems, training and the guest experience, the founders said the next stage is acceleration.
