All images courtesy of Little While.<\/p><\/div>\n<p><script async=\"\" defer=\"\" src=\"https:\/\/proxy.beyondwords.io\/npm\/@beyondwords\/player@latest\/dist\/umd.js\" onload=\"new BeyondWords.Player({ target: this, projectId: 50015, contentId: '3df598b0-e575-4ca2-be39-2e9c8b0cda83' })\">\n<\/script>&nbsp;<\/p>\n<p>Aiming to turn quick visits into long-term loyalty, a new cafe called <a href=\"https:\/\/www.littlewhilesd.com\/\" target=\"_blank\" rel=\"noopener\">Little While Coffee and Pastries<\/a> is now open in San Diego, offering specialty coffees roasted on-site alongside fresh baked goods.&nbsp;<\/p>\n<p>Lit largely by sunshine pouring through a front wall of windows, the North Park-University Heights area shop features an abundance of natural wood, from booth seating and wall paneling to a gantry with soft globe lighting above the wood-fronted service counter. Baking happens offsite, with fresh goods arriving daily.<\/p>\n<p>From the roaster, fresh coffee gradually makes its way into the hoppers of three <a href=\"https:\/\/dailycoffeenews.com\/2023\/11\/06\/grinder-maker-mazzer-joins-the-grind-by-weight-field-with-the-kony-sg\/\">Mazzer Kony SG<\/a> grind-by-weight espresso grinders or into Weber Workshops Bean Cellar single-dose tubes. Espresso prep includes a Nucleus NCD distributor, <a href=\"https:\/\/dailycoffeenews.com\/2022\/12\/14\/what-is-wdt-in-espresso-we-talked-to-its-creator-john-weiss\/\">WDT tools<\/a> and a PUQpress, with extractions pulled on a La Marzocco Linea PB with integrated scales. Coffees ground on a <a href=\"https:\/\/dailycoffeenews.com\/2022\/11\/28\/weber-workshops-unveils-eg-1-v3-grinder-opens-european-branch\/\">Weber grinder<\/a> are brewed as manual pourovers.<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2026\/01\/13\/little-while-coffee-is-in-it-for-the-long-run-in-san-diego\/little-while-san-diego-bar\/\" rel=\"attachment wp-att-193734\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-193734\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-bar.jpg\" alt=\"Little While San Diego bar\" width=\"1240\" height=\"827\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-bar.jpg 1240w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-bar-300x200.jpg 300w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-bar-620x414.jpg 620w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-bar-150x100.jpg 150w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-bar-768x512.jpg 768w\" sizes=\"auto, (max-width: 1240px) 100vw, 1240px\" \/><\/a><\/p>\n<p>&#8220;Across the bar, creativity shows up through restraint and intention, with a focus on dialing in fundamentals, honoring the coffee and creating drinks that feel thoughtful rather than flashy,&#8221; Torres said. &#8220;The coffee program leans toward balance, depth and approachability rather than extremes.&#8221;<\/p>\n<p>Little While Coffee and Pastries is the third business to emerge from parent company Sweet &amp; Savory Collective, founded by Torres and also home to small-batch ice cream shop <a href=\"https:\/\/www.stellajeans.com\/\" target=\"_blank\" rel=\"noopener\">Stella Jean\u2019s<\/a> and the <a href=\"https:\/\/www.poppieco.com\/\" target=\"_blank\" rel=\"noopener\">Pop Pie Co.<\/a> bakery.<\/p>\n<p>&#8220;Coffee has always been part of that ecosystem,&#8221; said Torres, &#8220;but Little While is our most coffee-forward concept and the first designed entirely around roasting, pastry and a focused cafe experience.&#8221;<\/p>\n<p>Torres, who trained with Drew Dodson and the <a href=\"https:\/\/www.roastronix.com\/\">Roastronix<\/a> team to hone his skills on the Stronghold, leads roasting while coordinating with Little While Cafe General Manager Nayton Rosales, who oversees beverage standards. Together, they work with the pastry team to keep the roasting, bar and pastry programs aligned.<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2026\/01\/13\/little-while-coffee-is-in-it-for-the-long-run-in-san-diego\/little-while-san-diego-1\/\" rel=\"attachment wp-att-193733\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-193733\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-1.jpg\" alt=\"Little While San Diego 1\" width=\"1240\" height=\"827\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-1.jpg 1240w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-1-300x200.jpg 300w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-1-620x414.jpg 620w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-1-150x100.jpg 150w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2026\/01\/Little-While-San-Diego-1-768x512.jpg 768w\" sizes=\"auto, (max-width: 1240px) 100vw, 1240px\" \/><\/a><\/p>\n<p>&#8220;The goal is to create pastries that feel familiar at first glance, but reveal depth, technique and storytelling in execution, anchored in French butter tradition and informed by global flavors and personal memory,&#8221; Torres said. &#8220;The pastries are there to support the coffee, invite a pause and encourage guests to linger, never to overwhelm the moment.&#8221;<\/p>\n<p>Highlights include a kaya kouign-amann inspired by pandan coconut kaya from Little While co-founder and chef Gan Suebsarakham\u2019s childhood, plus an ube leche flan tart created in celebration of a teammate\u2019s Filipino heritage.<\/p>\n<p>The roastery is expected to ramp up soon to supply Pop Pie Co.\u2019s coffee bar and to support online sales. There are no immediate plans for wholesale.<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2026\/01\/13\/little-while-coffee-is-in-it-for-the-long-run-in-san-diego\/little-while-san-diego-outside\/\" rel=\"attachment wp-att-193736\"><img
