All photos by Max Fasenko, courtesy of Papaver Roaster House.<\/p><\/div>\n<p><script async=\"\" defer=\"\" src=\"https:\/\/proxy.beyondwords.io\/npm\/@beyondwords\/player@latest\/dist\/umd.js\" onload=\"new BeyondWords.Player({ target: this, projectId: 50015, contentId: '737f8e1c-6b74-4ea5-b594-0a45d6b266a3' })\">\n<\/script><\/p>\n<p>A new family-run coffee shop in Olympia, Washington, called <a href=\"https:\/\/www.instagram.com\/papaverroasterhouse\/?hl=en\" target=\"_blank\" rel=\"noopener\">Papaver Roaster House<\/a> celebrated its grand opening this month inside a space that, at first glance, might pass as a jewelry store or other high-end boutique.<\/p>\n<p>Beyond the golden accents, white stone, soft lighting, natural wood and luxurious cushions throughout the shop, guests can find sweet Ukrainian family recipes and freshly roasted coffees.<\/p>\n<p>&#8220;It&#8217;s a little bit surprising. A pair of lounge chairs is tucked away in one corner, where the cafe\u2019s chessboard sees regular use.<\/p>\n<p>Sherepitka\u2019s wife, Elona Sherepitka, the head baker and co-owner of Papaver Roaster House, worked closely with Olympia-based interior designer <a href=\"https:\/\/pernuladesign.com\/\" target=\"_blank\" rel=\"noopener\">Alona Pernula<\/a> on the 1,400-square-foot cafe that includes a long, crystal-clear pastry case on top of the white quartz bar.<\/p>\n<p>The sweets showcased like precious gems inside that case are crafted by the Papaver baking team, which includes David Sherepitka\u2019s Ukrainian-born mother, Luybov Sherepitka, in a 4,000-square-foot off-site commercial production facility in Lacey. David Sherepitka was born in Moldova, and Elona Sherepitka grew up in the Odesa region of Ukraine.<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2025\/09\/25\/papaver-roaster-house-is-home-to-sweet-ukrainian-treats-and-fresh-roasts-in-olympia\/papaver-roaster-house-olympia-wa-group-photo\/\" rel=\"attachment wp-att-191070\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-191070\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-group-photo.jpg\" alt=\"Papaver Roaster House Olympia WA group photo\" width=\"1179\" height=\"1770\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-group-photo.jpg 1179w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-group-photo-200x300.jpg 200w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-group-photo-413x620.jpg 413w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-group-photo-100x150.jpg 100w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-group-photo-768x1153.jpg 768w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-group-photo-1023x1536.jpg 1023w\" sizes=\"auto, (max-width: 1179px) 100vw, 1179px\" \/><\/a><\/p>\n<p>&#8220;A lot of the recipes we&#8217;re using are tied to our heritage,&#8221; Sherepitka said. &#8220;One of our most popular cakes right now is my mom&#8217;s recipe of a very traditional honey cake that we have in basically all the Eastern European countries. So it&#8217;s very close to home for us.&#8221;<\/p>\n<p>The Lacey facility also houses the roastery, where head roaster Ilya Kushnirenko roasts Papaver\u2019s full range of single-origin offerings on a <a href=\"https:\/\/loring.com\/\" target=\"_blank\" rel=\"noopener\">Loring<\/a> S15 Falcon. Kushnirenko is also the owner of a roasting company with one cafe in Ukraine called <a href=\"https:\/\/hipsters.ua\/en\/\" target=\"_blank\" rel=\"noopener\">Hipsters Coffee Roasters<\/a>, which he founded in Kharkiv but recently relocated due to sustained heavy bombing amid the ongoing Russian invasion. Kushnirenko and his wife, Elena Babenko, now both work at Papaver, with Babenko in the bakery.<\/p>\n<p>&#8220;Obviously with the current events, his business took a huge hit,&#8221; said Sherepitka. &#8220;We were able to sponsor them\u00a0and help them come over here. Part of it was for us to work together, but another part of it was, you know, we&#8217;re always looking for ways we can help people. It was a great thing for us to be able to help them out and help their family. They have a 9-year-old son, and I came over when I was nine.&#8221;<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2025\/09\/25\/papaver-roaster-house-is-home-to-sweet-ukrainian-treats-and-fresh-roasts-in-olympia\/papaver-roaster-house-olympia-wa-bakery\/\" rel=\"attachment wp-att-191068\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-191068\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-bakery.jpg\" alt=\"Papaver Roaster House Olympia WA bakery\" width=\"1179\" height=\"1770\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-bakery.jpg 1179w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-bakery-200x300.jpg 200w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-bakery-413x620.jpg 413w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-bakery-100x150.jpg 100w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-bakery-768x1153.jpg 768w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Papaver-Roaster-House-Olympia-WA-bakery-1023x1536.jpg 1023w\" sizes=\"auto, (max-width: 1179px) 100vw, 1179px\" \/><\/a><\/p>\n<p>Kushnirenko brings more than 15 years of experience sourcing and roasting coffee to Papaver, where green coffees that score 87 points or higher are purchased through importers such as <a href=\"https:\/\/falconcoffees.com\/\" target=\"_blank\" rel=\"noopener\">Falcon Coffees<\/a>, <a href=\"https:\/\/redfoxcoffeemerchants.com\/\" target=\"_blank\" rel=\"noopener\">Red Fox Coffee Merchants<\/a> and <a href=\"https:\/\/caravela.coffee\/en\" target=\"_blank\" rel=\"noopener\">Caravela Coffee<\/a>, as well as directly from producers in Colombia.<\/p>\n<p>&#8220;Most of our house roasting is a modern take on a Scandinavian roast,&#8221; Sherepitka said. &#8220;Everything is on the lighter side.
