All images courtesy of Metric Coffee.<\/p><\/div>\n<p><script async=\"\" defer=\"\" src=\"https:\/\/proxy.beyondwords.io\/npm\/@beyondwords\/player@latest\/dist\/umd.js\" onload=\"new BeyondWords.Player({ target: this, projectId: 50015, contentId: '4e2dd0f3-93d0-47a6-a055-1b9174526afd' })\">\n<\/script>&nbsp;<\/p>\n<p>Quality-focused Chicago roaster <a href=\"https:\/\/metriccoffee.com\/\" target=\"_blank\" rel=\"noopener\">Metric Coffee<\/a> brought a three-year project to fruition this month, opening a new roastery, headquarters and all-day bakery cafe called Milli in Avondale.&nbsp;<\/p>\n<p>Inside a former 10,000-square-foot antique European furniture warehouse, Milli occupies the front of the house, offering views into the new Metric roastery and the Milli bakery.&nbsp;<\/p>\n<p>Warm colors and varied textures of brick, wood, stone and plants balance liveliness and comfort throughout the seating and service areas. As the day winds down, the glows from large modern pendants and a 3D-printed light fixture designed by Metric Coffee Co-Founder Darko Arandjelovic take over.<\/p>\n<p>&#8220;Darko\u2019s hand is everywhere in the design, from the way the service spine guides the guest flow to the way light itself becomes a building material, and he managed to tame a massive warehouse without carving it into boxes,&#8221; Metric Coffee Co-Founder Xavier Alexander told Daily Coffee News. &#8220;The most remarkable part is that we built it without outside investors. Painful? Absolutely. Worth it? Completely.&#8221;<\/p>\n<p class=\"whitespace-normal break-words\">Milli, whose name references the metric system, is debuting as a daytime eatery with plans to expand into an all-day affair by next year. Current offerings include seasonally rotating pastries, a full coffee menu and retail bottles of wine. Culinary Director Kirstin Alexander, Xavier&#8217;s wife, leads the kitchen with head baker Lou Turner, turning out laminated pastries and breakfast fare while sandwiches, quiches, pizzas and more are in development.<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2025\/09\/22\/milli-by-metric-coffee-goes-the-extra-mile-in-chicago\/milli-bakery\/\" rel=\"attachment wp-att-190983\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-190983\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Milli-bakery.jpg\" alt=\"Milli bakery\" width=\"1240\" height=\"930\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Milli-bakery.jpg 1240w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Milli-bakery-300x225.jpg 300w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Milli-bakery-620x465.jpg 620w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Milli-bakery-150x113.jpg 150w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/09\/Milli-bakery-768x576.jpg 768w\" sizes=\"auto, (max-width: 1240px) 100vw, 1240px\" \/><\/a><\/p>\n<p>&#8220;If Metric was a tight solo, Milli is the whole band \u2014 same melody, bigger stage, new instruments,&#8221; said Xavier Alexander. &#8220;Milli carries the same DNA that\u2019s always defined Metric: coffee sourced with care, roasted with precision and served with transparency so guests can see and feel the work behind every cup&#8230; What\u2019s different is the scale and ambition.&#8221;<\/p>\n<p>After launching as a roasting company in 2013, Alexander and Arandjelovic opened their <a href=\"https:\/\/dailycoffeenews.com\/2016\/10\/11\/metric-coffee-opens-first-cafe-in-chicagos-coffee-alley\/\" target=\"_blank\" rel=\"noopener\">first cafe in 2016<\/a>. In 2020, Metric absorbed <a href=\"https:\/\/dailycoffeenews.com\/2020\/11\/25\/metric-coffee-partners-in-new-chicago-bakery-brite\/\" target=\"_blank\" rel=\"noopener\">the bakery Brite<\/a>, running the wholesale-only operation for four years prior to winding it down in advance of the new project. said Alexander.&nbsp;<\/p>\n<p>Meanwhile, Metric plans to continue to strengthen its direct-trade relationships while continuously seeking and improving quality and precision roasting.&nbsp;<\/p>\n<p>&#8220;They move in tandem, two sides of the same coin,&#8221;
