Images courtesy of Rob Hoos \/ Iteration.Coffee.<\/p><\/div>\n<p>Time flies when you&#8217;re roasting.&nbsp;<\/p>\n<p>It was exactly 10 years ago to the day that Daily Coffee News <a href=\"https:\/\/dailycoffeenews.com\/2015\/03\/13\/one-roasters-66-page-manifesto-on-modulating-the-flavor-profile-of-coffee\/\" target=\"_blank\" rel=\"noopener\">shared the news of the launch of&nbsp;<em>Modulating the Flavor Profile of<\/em> Coffee<\/a>, the first book from longtime coffee roaster and consultant Rob Hoos that would become a seminal text in the roasting field.&nbsp;<\/p>\n<p>Now we&#8217;re here to share news of the launch of Hoos&#8217;s latest book, <em><a href=\"https:\/\/hoos.coffee\/cultivar\/\" target=\"_blank\" rel=\"noopener\">Cultivar: A Practical Guide for Coffee Roasters<\/a>.&nbsp;<\/em><\/p>\n<p><em>(<strong>Publisher&#8217;s note:<\/strong> DCN or its affiliates do not stand to make any money off the book&#8217;s publication; we just think Rob does awesome work that generally benefits professional coffee roasters.)<\/em><\/p>\n<p>As the new book&#8217;s title suggests, it is focused on specific coffee cultivars, i.e. cultivated varieties of coffee that are commonly found in the green coffee marketplace.&nbsp;<\/p>\n<p>&#8220;The entire intention of this book is practical,&#8221; Hoos recently told DCN. &#8220;My goal is that it could help guide coffee roasters to understand better what flavors are possible from different cultivars, to guide their buying, and how to approach roasting them well \u2014 faster, so they can reduce the coffee waste and product development time.&#8221;<\/p>\n<p><a href=\"https:\/\/dailycoffeenews.com\/2025\/03\/13\/cultivar-the-new-book-from-rob-hoos-offers-a-practical-approach-to-the-roast\/cultivar-rob-hoos-2\/\" rel=\"attachment wp-att-186611\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-186611\" src=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/03\/Cultivar-Rob-Hoos-2.jpg\" alt=\"Cultivar Rob Hoos 2\" width=\"1240\" height=\"1255\" srcset=\"https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/03\/Cultivar-Rob-Hoos-2.jpg 1240w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/03\/Cultivar-Rob-Hoos-2-296x300.jpg 296w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/03\/Cultivar-Rob-Hoos-2-613x620.jpg 613w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/03\/Cultivar-Rob-Hoos-2-148x150.jpg 148w, https:\/\/dailycoffeenews.com\/wp-content\/uploads\/2025\/03\/Cultivar-Rob-Hoos-2-768x777.jpg 768w\" sizes=\"auto, (max-width: 1240px) 100vw, 1240px\" \/><\/a><\/p>\n<p>The book stems from a project Hoos launched with his <a href=\"https:\/\/dailycoffeenews.com\/2022\/01\/26\/roaster-and-consultant-rob-hoos-launches-iteration-coffee\/\" target=\"_blank\" rel=\"noopener\">Iteration.Coffee company<\/a> in 2023, now called the Cultivar Project, which turned into a large-scale profile-development and flavor study focused on coffee cultivars.&nbsp;<\/p>\n<p>The project involved sourcing as many distinct cultivars from the same farms as possible, and ensuring consistent post-harvest processing in order to isolate cultivar as the primary variable.<\/p>\n<p>Hoos repeated the process across multiple farms and countries, while also comparing the same cultivars grown and processed \u2014 always &#8220;washed&#8221; or &#8220;wet&#8221; process \u2014 in different regions.&nbsp;<\/p>\n<p>Over more than 600 days, Hoos conducted 309 roasts on the same roaster, analyzing 31 coffees from six farms in four different coffee-producing countries.&nbsp;<\/p>\n<p>The&nbsp;<em>Cultivar&nbsp;<\/em>book combines this large-scale analysis with Hoos&#8217;s 16 years of professional roasting experience, as well as 12 years of consulting work.&nbsp;<\/p>\n<p>&#8220;This book provides flavor expectations for many common cultivars \u2014 not an exhaustive list, but a practical one \u2014 along with preliminary roasting recommendations,&#8221; Hoos said. &#8220;I also explore how to approach coffees based on processing method&nbsp;and&nbsp;terroir. Unlike&nbsp;<em>Modulating<\/em>, where I was more open-ended in my findings,&nbsp;<em>Cultivar<\/em> is explicit. I provide clear roasting approaches&nbsp;for those looking to fine-tune their profiles. The goal?
