Whether to Mexico, Vietnam, Ukraine or outer space, new coffee shops that opened this year up and down the West Coast showed specialty coffee’s power to deepen connections to places and cultures.
2025 was a particularly challenging year for most independent coffee shop operators. Many of these shops faced it head on, leaning into craft, hospitality and a sense of place.
In several instances, we found operators putting a lot of energy into multifaceted approaches, combining quality coffee with different cuisines, luxury cars, premium design or even a roastery equipment showroom.
